MeritO coconut flour ½ cup
MeritO coconut oil ½ cup
Coconut sugar/cane sugar ⅔ cup
MeritO coconut milk/milk/yogurt 2 tbsp.
Vanilla extracts 2 tsp.
Baking powder 1 tsp.
Salt ½ tsp.
Eggs (55-65g) 6
Preheat the oven to 315’F.
Whisk MeritO coconut oil, coconut sugar (or honey), salt, vanilla extract, eggs, and MeritO coconut milk (or milk, or yogurt).
In a large mixing bowl, sift the MeritO coconut flour and baking powder. Add wet mixture to dried mixture and mix well until the mixture resembles a smooth, runny batter.
Pour the mixture each paper cup ¾ full.
Bake for 15-20 minutes, or until a toothpick inserted near the center of a cupcake comes out clean.
Completely cool on a wire rack prior serve.
