MeritO coconut flour                       1     cup

MeritO desiccated coconut            1     cup

Baking powder                                 ½    cup

Yogurt                                               1½   cup

Coconut sugar/honey                     ½    cup

Eggs (55-65g)                                  6


Preheat oven to 160’C/320’F.

Grease a 19.5cm x 9.5cm loaf pan with a bit of MeritO coconut oil.

In a large mixing bowl, mix all the MeritO coconut flour, eggs, yogurt, and coconut sugar (or honey) well until the mixture resembles a smooth, runny batter. Add the baking powder and MeritO desiccated coconut then mix to combine.

Pour the mixture into the prepared loaf pan.

Bake for 45-50 minutes, or until a toothpick inserted near the center of the loaf comes out clean.

Let the bread cool a bit, and then remove from loaf pan onto a cooling rack. Completely cool before slice to serve.
